- Preheat oven to 195°C. Grease a 1.5 quart casserole dish
- Sprinkle the cranberries over the bottom of the dish
- In a bowl, combine the oats, pumpkin pie spice, salt, and baking powder. Stir until well combined and sprinkle evenly over cranberries.
- To the (now empty) bowl, add milk, egg, pumpkin puree, and maple syrup. Whisk until smooth, then continue whisking as you pour in the melted coconut oil. Pour the mixture over the oats.
- Sprinkle the pecans over the top and bake for 35-35 minutes or until golden and set in the center.
